Cheater Chicken Pot Pie

I reallly wanted chicken pot pie, but didn’t want to make it completely from scratch.  So, I did some googling and combined some aspects of a few recipes.

Here’s the result.

Cheater Chicken Pot Pie

Filling
1 lb cubed or shredded cooked Chicken
1 can Carrots and Peas, drained
1 can diced Potatoes, drained
1 can Chicken Broth
2/3 C Milk
1/3 C Flour
1 Tbsp Sage
1 tsp Celery Salt
1/2 C diced onion
2 tsp pepper
1 tsp salt

Crust
1 cup flour
2 tsp. baking powder
½ tsp. ground sage
2 tbsp. butter 
1/8 tsp. salt
1/3 cup milk



Butter or egg wash to brush on crust


Preheat oven to 350.


Bring broth and milk to a slow boil over medium heat.  Add all seasonings to pot.  Mix flour with a little water to make a paste.  Whisk into broth mixture.  Remove from heat after it thickens some.  Add chicken and veggies and mix to incorporate.  Pour into a 9×9 pan.  


Mix crust ingredients together until it forms a ball.  Roll out on floured surface until it will cover the pan.  Place over pan, tucking sides a bit.  Poke some holes in top with a fork.  Brush with a little butter or egg wash to help brown the top.


Bake for 30-35 minutes.  Let sit 10 minutes.  Enjoy.
